GOOD PRACTICES IN OLIVE OIL HARVESTING, EXTRACTION, STORAGE AND FILTRATION

Online Seminar Registrations

The Center for Agri-food Entrepreneurship in Messinia (CAEM) is announcing the beginning of the registration period for the webinar on Good practices in olive oil harvesting, extraction, storage and filtration. The webinar begins on January 18 and is aimed at those who wish to delve into the technology of olive oil production.

The topics presented are the following:

  • Determining the right harvest time; good harvesting practices. Good practices for transporting and storing olives.
  • Olive mill: Production methods and processes, mechanical equipment, good practices. The key elements of the olive mill and how they relate to quality.
  • Filtration and its methods. Storage: Methods and proper temperatures. Packaging and labeling of olive oils.
  • Olive oil categories. Chemical characteristics of olive oil, basic chemical analyses, acidity, peroxides, K indicators.

The webinar, which begins on January 18, has a total duration of 12 training hours and will be taking place twice a week via the ZOOM platform.
